Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: 1/4 cup chicken broth or white wine

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook for 7-8 minutes, turning occasionally, until browned and cooked through. Transfer to a plate, slice into ½-inch pieces, and set aside.
  2. In the same skillet, reduce heat to medium. Add the onion and both bell peppers. Cook for 6-8 minutes, stirring occasionally, until softened and slightly caramelized.
  3. Stir in the minced garlic and Italian seasoning. Cook for 1 minute, just until fragrant.
  4. Add the chicken broth or white wine (if using) and scrape up the browned bits from the bottom. Simmer for 2-3 minutes.
  5. Return the sliced sausage to the skillet, toss everything together, and cook for another 2-3 minutes until heated through and coated with the sauce. Adjust salt and pepper as needed.

Notes

Use high-quality Italian sausage for best flavor. Don’t overcrowd the pan while browning the sausage.
